The Story of True Neapolitan

Most pizza is made to be fast. Amore is made to be true.

As New Mexico’s first and only certified Neapolitan pizzeria, we didn’t just bring a recipe to Albuquerque; we brought tradition and a discipline. We imported our stone ovens from Naples, Italy.  We source the legendary Caputo flour and San Marzano tomatoes, and we hand-stretch our own mozzarella every single morning. We believe that every bite should tell a story—one of ancient craft, premium ingredients, and a refusal to cut corners.

The Texture of Tradition

Authentic Neapolitan pizza is an art of fire and hydration. At a blistering 905°F, our stone oven fires our hand-stretched dough in under 90 seconds.

This intense flash-cook creates a cornicione (the rim) that is charred, airy, and crisp, while the center remains soft, delicate, and velvety—the true hallmark of a traditional Italian pie. This tender heart is designed to be folded “libretto” style or enjoyed with a knife and fork. It isn’t just a meal; it’s a sensory experience that honors the streets of Naples.

While our techniques are ancient, our spirit belongs to the High Desert. From our home in Tin Can Alley, we’ve married the strict standards of Italy with the bold flavors of the 505. Whether it’s the bite of Hatch green chile on our signature Zia Pizza or a local craft beer paired with an ABQ Duke, Amore is where Old World craft meets New Mexican culture.
