History has a strange way of repeating itself every few centuries; take Pizza for example.
Legend has it modern pizza came to be in 1889, when Queen Margherita of Savoy – the first queen of a united Italy – visited Naples and was served a pizza made by renowned pizzaiolo (pizza-maker) Raffaele Esposito and consisting of tomato sauce, mozzarella and a sprig of basil (consequentially the colors of the new Italian flag: red, green, & white.)Said pizza was eponymously named the Margherita, and is considered the ‘original pizza,’ (although ‘traditional’ Neapolitan pizza includes Marinara (garlic, red sauce) as well.)
New York pizza is the first America ever knew. Neapolitan immigrants in the late nineteenth century brought the knowledge to make it, but lacked the essential ingredients and methods to exactly replicate it.
